How accurate is detection?

It infers the stack from signatures in the page — global variables, markup patterns, asset URLs and headers. It is reliable for common tools, but a heavily customised or proxied site can hide things.

Can it detect back-end languages?

Only when the site reveals them through headers or obvious URL patterns. Server-side technology is often invisible from the browser by design.
